This innovative single malt whisky transforms 4-6 year old single cask whisky into a marriage of much older whisky through fractional blending and extended aging in our Solera system.
This four cask Solera is made up of four 500 litre American and French oak puncheons (1 x Chardonnay, 1 x Tawny Port & 2 x very old Australian Muscat).
The extra years in these casks allows the liquid more time to soften as it takes on premium Muscat characteristics. Throughout the process, we regularly taste the liquid in each cask and carefully decide when to transfer part of the liquid on to the next in the line. Always leaving behind at least 50%, never allowing the level in each cask to dip too low. This is the secret in the process which creates the depth of flavour and extra age of spirit in each bottle. It’s all gravity fed, to ensure a gentle transfer. The finished whisky is bolder and older than the single casks that went into the system. Offering drinkability and round sweetness for those newer to whisky, whilst maintaining complexity and intriguing character for those a little further along in their whisky journey.
Colour: Bronze Gold
Nose: Begins with a mix of plum and stewed rhubarb and then develops into sweeter notes of honeycomb and caramelised barely sugar. Lingering tones of subtle leather and oak.
Palate: A big, bold hit of Muscat raisins and black cherry. Followed by dark chocolate and oak which leaves a pleasant dryness. There is also a lingering Vanilla sweetness undertone throughout.
Finish: Plenty of oil to coat the palate from top to bottom. A slightly drying, moreish finish brings you back for another sip.
