The gin that started it, and the berries that took it somewhere new.
It begins with our Classic Gin. A triple-distilled London Dry style made with pure East Coast rainwater and ten botanicals, including Native Bush Pepper, Tasmanian Wattleseed and lemon grown right here at the distillery. Smooth enough to drink neat, complex enough to carry a Martini or Negroni.
Then each year we hand-pick sloe berries from Northern Tasmania and steep them in that same dry gin for 6 months. The result is our small-batch Sloe Gin, rich, tart and made in limited quantities. Pour it over ice or lengthen it with soda on a warm afternoon.
And because the berries were too good to stop there, we turned them into a paste. Sweet, tart and made in small batches, it belongs on a cheese board next to a G&T. Spread it on toast, spoon it over a sharp cheddar, or stir it through a sauce.
