Spring Bay Brandy is one of our rare releases, born of rich Riesling and complex Gewurztraminer, matured within our aged & seasoned oak casks. Dripping with honeyed raisin and resonating with pine, our brandy lands delicately on the palate, teasing cinnamon, ginger, and apple, layered with sticky plum and burnt caramels. Patience in barreling has produced a refined, subtle spirit, finishing long, fine, rich, golden, and sweet - suitable for toasting a summer’s setting sun.
What's the story behind Spring Bay Distillery Brandy?
When we received The Beast, our 2500L Copper Pot still, in 2019, we seasoned it with a distillation of some Gewurztraminer / Riesling wine by Domaine Dawnelle.
The resulting Eau de Vie was then matured for nearly 3 years in some unique barrels: an ex-Pinot Port, and finished in an ex-Riesling/Sauvignon Blanc Brandy cask, lent to us by Winstead Winery.
